Sumatra Azalea Honey

Description

This coffee comes to us from Bloom Coffee Project in Sumatra. Bloom Coffee Project is a collaboration of producers whose goal is to change the perception of Indonesian coffees amongst coffee consumers by applying various of experimental processing methods to their highest quality beans.

The producers used a honey process for the beans which comprise the Azalea Honey coffee. This means that after being picked, the fruit of the coffee cherry is pulped and then left to dry on the bean, endowing it with the natural sweetness contained in the fruit. After several days, the remaining fruit is washed off of the beans and they are then dried and milled.

Expect a cup with a light body, clean acidity, and notes of herb, citrus, cinnamon and sugarcane.
